Friday Flights of Fancy

It's Friday which means it is time for another adorable kid's room.

This one hits it out of the park for me.  It's full of whimsy and fun details that just scream personality and I am in LOVE with that rustic wood "crown molding".  It seems like the kind of place you could jump on the bed and not get in trouble...perfect!

Berry Kissed Pavlova


As I mentioned yesterday I won a recipe contest with the dish pictured above which I named "Berry Kissed Pavlova".  A pavlova is basically just a baked meringue that melts in your mouth that is loaded with fruit and whipped cream and although the final result is beautiful and looks kind of fancy this recipe and the techniques used are very easy and fun to do. 

I made one big disc and portioned it out but it's also fun to do mini pavlovas which would be perfect for that special Valentine's dinner that may be coming up.

Berry Kissed Pavlova
For the merinque

8 large egg whites
Pinch of salt
1 2/3 cup white sugar
1 T. cornstarch
2 t. white vinegar
1 t. vanilla


Preheat the oven to 350 degrees. Line your baking sheet with parchment paper and draw an 8 inch circle on the paper.

With your stand mixer [handheld would work fine too] beat the egg whites and salt until satiny peaks form. Beat in the sugar, a spoonful at a time, until the meringue is stiff and shiny [you should be able to form stiff peaks when you lift the mixer out of the meringue]. Sprinkle the cornstarch, vinegar, and vanilla into the meringue and fold in lightly.

Mound the meringue onto the baking sheet within the circle, flatten the top and smooth out the sides [meringue will puff & expand as you bake]. Put in the oven and immediately reduce the temperature to 300 degrees. Cook for 1 ¾ hours. Turn off the oven and leave the pavlova in it to cool completely [if your oven is electric crack the door open when cooling]. Don’t be frustrated when you remove the meringue from the oven, it will fall a bit and should have a cracked exterior that hides the gooey marshmallow like interior. Once cool you can store in an airtight container for up to a week.

Berry compote
1 pint of fresh strawberries
1 bag frozen blackberries
1 bag frozen blueberries
1/2 c. honey
2 T. sugar
Zest of one lime

Slice strawberries and combine all ingredients in a medium bowl. Refrigerate until ready to use. I usually let mine sit for at least 2 hours so the juices from the fruit come out and create a delicious syrupy concoction.

Blushed Whip Cream
1 container of Cool Whip or 1 bowl of homemade whipped cream**
¼ c. honey
2 T. berry syrup from your berry compote
Zest from one lemon and lime

Combine all ingredients, using a folding motion so the whipped topping stays light an fluffy.
**I would suggest making your own whipped cream but for my contest I had to use whipped topping and it still turned out great.

Assembly:
Once all your components are done simply mound the Blushed whip cream into the center of the meringue and top with the berry compote. It’s gorgeous as is but if you want to take it one step further you can top the whole thing with a nest of spun sugar [see recipe below].



Spun sugar
1/2 cup white sugar
1/3 cup light karo syrup

Prep your work space by taping two wooden spoons [with the handles lightly oiled] to your countertop about 8-12 inches apart with the handles facing out and overhanging the counter by 6-7 inches. Cover the floor below the handles with newspaper.


In a medium sauce pan heat the karo syrup and sugar until it reaches 265 degrees and a light amber caramel develops – usually 5-6 minutes. Insert your candy thermometer after 4 minutes so you can moniter the temperature. Once it has reached 265 degrees remove from heat and let cool until it reaches 150 degrees.

Take two forms with their backs side to side and string the caramel across the spoon handles so it forms whisper thin strings. If the caramel mixture becomes hard to work with simply place it back on the heat for a minute until it loosens back up.

Gather the strings lightly so it forms a nest and place in a cool, dry place until ready to use.

I hope you try out this recipe and play with different combinations of fruit and flavors - the options are limitless.

Friday Flights of Fancy

I have a confession: I have a whole folder of inspirational images I'm saving for my "one-day" child's room.  In fact I catch myself all the time from buying things for this pretend room - fabric & furniture top the list, but I refrain knowing that somehow the act of buying things for a non-exsistent child will jinx me from actually having one of my own. 

But I've decided that these images are too pretty not to share so starting today and continuing on every Friday I will be posting an image from my file to hopefully inspire any mothers out there who want to create a fun and creative place for their little ones.

I was pretty lucky in that department - my Mom always made our rooms special with homemade quilts, curtains, etc.  and as we got older she would consult with us on what we wanted in our rooms. 

This image below is as close to perfection as I can imagine [even though it's not technically a kids room].  The whimsical wall treatment manages to feel fresh and modern while that color palette of spring green and punchy pink is pure happiness and I love how the charming print on the chair just pulls it all together.  LOVE!


So excited...

I just found the perfect drawer pulls for a project I've been working on - bonus that they were such a good deal (gotta love that ebay).  I can't wait to show you the finished result!

Adore: succulents


The sun has been shining and the weather has been warmer the last few days and it has me dreaming of spring.  In an effort to bring some of that spring time dreaming into the house I've made a BIG decision: it's time to introduce house plants into my life.


Now, I've tried before and despite my best intentions every living plant that enters my home always ends up in the trash - dead and broken.  But it's a new year and a chance to redeem myself, although I'm thinking of starting out slow with the easy, low maintenance, and quite honestly beautiful family of plants known as succulents.  They are simple and so fresh looking, these photos alone are enough inspiration for me to give it another go.

Comfort Food in its simpliest form



Last night Mom and Dad came over for dinner and we had a simple meal of tomato soup and grilled cheese.  The soup was so easy to make and was warm, hearty, and healthy - the perfect thing for a cold and wet winter day.

Hearty Tomato Soup
serves 4-6

5 cloves of fresh garlic - roughly chopped
1 large yellow onion - diced
7 stalks of celery - diced
1 bag of fresh baby spinach
1 large can of whole tomatoes
1 large can of chopped tomatoes
2 cans of low sodium vegtable stock
1 tsp. oregeno
1 tsp. onion powder
1 T. honey

pinch of red chile flakes
grating of fresh nutmeg
3/4 cup half & half
salt and pepper to taste

In a large stockpot add enough olive oil to lightly cover the bottom of the pot, add your garlic, onion, and celery along with a generous pinch of salt and freshly cracked black pepper.  On medium heat cook the vegtables till they soften and start to look translucent.


Add your bag of fresh spinach to the pot and allow to wilt.  Now add your two cans of tomatoes and vegtable stock - stir to incorporate the onion, garlic, spinach and celery.

Time to add your oregeno, chili flakes, onion powder and honey.  Turn heat down to low and allow to simmer for at least 30 minutes and up to 4 hours.

Before you serve blend the soup until it is almost smooth - just enough to incorporate the whole tomatoes, spinach, and veggies.

Right before you are ready to serve add some freshly ground nutmeg - about 1 tsp. and the half and half.

Home sweet home

We had a great event down in Fort Lauderdale even though it was freezing and wet but as always I was thrilled to come home especially so I could spend a few days with Justin before he hits the road for three weeks bouncing from Utah, Colorado and what seems like everything in-between.  The only good thing that comes from Jus being gone [he may disagree] is that I have tons of time and space to work on projects.  I've already starting compiling a list that includes painting the hall, coming up with a solution for the dining room, finishing a dresser project and continuing my purge of messy corners that seem to fill the house.

Yesterday I tackled one such messy corner - our media storage.  We are not huge dvd collectors but we have enough that they seemed to be taking over the lower portion of our hutch.  For $5 and 30 minutes of time we now have a slimmed down storage solution for all of those dvd's.

I purchased this box of dvd sleeves at Target, I opted for the plastic ones but they come in paper and a bunch of different colors.  Next it was easy as going through and transferring the dvds from their original case to a sleeve. 



So what was originally this mess now fits neatly in one small box (you'll notice I also have a bunch of cd's in there as well.  You'll also notice that I left my Gilmore Girl collection in their original cases since there are so many discs in each season.)

This worked well for us because we have less than 50 dvds so its still easy to find what we're looking for.  But for those of you with large collections you could easily transfer them to a cd book for easier look-up.

One messy corner done - only 8 million more to go.

I'm headed to Fort Lauderdale for a work event and will do my best to post but can't promise anything as the unexpected always comes up on these trips.  I'm praying for sunshine and easy travel - right now neither are looking too promising but one can hope.

Begining again

I hope you all had a wonderful New Year's weekend.  Justin and I had a long weekend full of highs and lows -

Highs being a Vandal win at the Humanitarian Bowl [YAY], visits to the Stagecoach for the world famous bar prawns, a raucous game of Nertz, good times with friends, and an amazing concert.  We lucked out because one of our all-time favorite bands Mickey and the Motorcars was in town and rocked it out on New Years Eve, Justin and Mickey felt like old friends after Jus ran into him and the other Braun Brothers from Reckless Kelly (adore) at a local watering hole earlier in the week where they talked about life and women.  We embraced the rockstar attitude and danced the night away as the clock struck midnight - so much fun!

You can listen to some of their tunes here, they should definitely be included in your 2010 soundtrack.

As far as the lows, both Justin and I got sick over the weekend - bad cold for him and tummy aches for me.  Kinda put a damper on the other fun things we had planned like skiing and house projects although it did offer a lot of time to contemplate the passing year and think about what is ahead.  I'm not going to lie, 2009 was not the easiest year for us but that is already a distant memory as I look toward 2010 and all of the rich opportunities it presents.

I decided this year to come up with a motto - my own mantra for 2010 and it is this:

Embrace the potential of each day!

I just want to capture the opportunities each day brings whether that be with work, my relationships, my passions, anything.  I just want to not take "it" for granted and to keep my momentum always shifting upwards.  There are a lot of things I want to accomplish this year ~ too many to put down but here are just a few of the bigger ones that immediately came to mind...


I can't wait to get started on making the above goals a reality.  It's going to be a good year...I can feel it!
